Peanut Budder Squirrels
1/2 cup Buckwheat Flour
1 cup of Brown Rice Flour
2 T. ground Flax
1 tsp. Cinnamon
1 ripe Banana
1/2 cup of Peanut Butter (we use Buddy Budder)
3 T. vegetable broth (or water)
Preheat oven to 350 degrees.
In a large bowl whisk together all the dry ingredients and set aside.
In a smaller bowl mash banana and stir in broth and Peanut Butter.
Pour mixture into the dry ingredient bowl and mix together by hand to form a dough ball (if needed add a little more broth).
Line your baking sheet with parchment paper.
Roll out dough to 1/2 inch thickness and use your squirrel cookie cutter to cut the desired shapes.
Bake for 10-15 mins or until golden brown. Allow cooling.
